5 No-Stress Dinners I Can't Stop Making

Welcome, summer! After a busy weekend of hosting, I’m ready for weeknight meals that feel easy. Being new to the Midwest (after living in California for the past five years), I couldn’t be happier to have sunny days and local produce popping up. Now that summertime is something to revere (versus perpetual decent weather, all year long), it is my mission to soak it up until the last leaf falls from the trees. 

This week, I’m looking for quick, easy meals that I can transport, make into customizable meals, and will make good lunch leftovers for the next day. These recipes are ones I make over and over for these very reasons.

  • Sesame Peanut Noodles

    I love soba noodles which are made with buckwheat flour. They are nutty in flavor with a little chew, perfect for soaking up a peanutty sauce. I like to add snow peas and edamame for a one-pot meal—just add the peas and shelled edamame halfway through cooking your noodles. This recipe also makes a great lunch, so plan accordingly!

  • Honey Mustard Baked Salmon

  • One-Pan Beef and Chickpeas

    I love how simple this is; I’m going to make this with a plant-based ground beef. Yum! I’m having some friends for dinner, so I’m going to set up a build-your-own hummus bowl or pita bar with some of my grocery store favorites like Trader Joe’s zhoug, hummus, pickles, and tahini sauce.

  • Cà Ri Gà (Vietnamese Chicken Curry)

    Recipe developer Andrea Nguyen says "Rustic yet elegant, this fragrant curry may be served with baguette for dipping or with rice; add a mild vegetable side, such as sautéed chard, to let the curry shine. If the curry is too hot, squirt on some lime juice to cut the heat."

    We’re on the move during dinner time this week, so I’m making these to fuel us in the car… as long as our toddler lets us eat! I like to add sprouts to mine and serve it on an everything bagel. Sometimes you just need a one-minute dinner.
