The New $1.29 ALDI Find I Always Keep on Hand for Easy Dinners

Some ALDI brands have almost become like friends or family, as my son says, "Can you get some pizzas from Mama Cozzi?"

Another brand we're becoming familiar friends with is Casa Mamita, as in, "Casa Mamita's nuevo Mexican-Style Corn es fantastico." My son is practicing his high school Spanish.

What's So Fantastic About Casa Mamita's Mexican-Style Corn

My son and husband love all Mexican and Tex-Mex dishes, and we're familiar with ALDI's selection of ingredients, especially the Casa Mamita line of products. Casa Mamita's taco shells are a regular purchase in this house.

I was excited to see a new addition to the lineup: Mexican-style corn.  An 11-ounce can of this corn costs only $1.29. It's corn mixed with diced red and green bell peppers.

It tastes pretty darn good by itself—just warmed up for a minute or two in the microwave. That's how my son first tried it. It tastes like sweet summer corn with the tangy heat from the bell peppers. My son added butter and salt to give it a boost. 

How To Use Mexican-Style Corn

It's perfect to add as a kid-friendly vegetable dish to a Tex-Mex dinner, and it's also great to add to tacos, enchiladas, and burritos. It pairs exceptionally well with seafood. 

If you're hosting a taco bar, mix a can with a cup and a half of salsa or pico de gallo for a perfect dupe of a fast-casual Mexican restaurant's corn salsa. You could also mix it with about 1/2 cup of black beans and 1/2 cup of salsa for a black bean salsa. 

I also love mixing half a can with a cup of rice in my rice cooker. It makes perfect, Mexican-style rice without any effort. Open and dump, add some water, and flick the switch on. 

I've added a can to a box of cornbread and some Tajín seasoning to make cornbread with a kick. It's so good with honey butter. Some other ways to use this corn are in corn fritters, on top of salads, and perfect in soups or chowders.

Casa Mamita’s Mexican-Style Corn is a simple, flavorful shortcut that makes weeknight dinners easier—and tastier. It's one of those ALDI finds that’s always worth grabbing an extra can or two.
